Red Velvet Love


Lately, I have been spending hours and hours on Pinterest. I am constantly finding recipes I want to try, but have never had the time or ingredients to do so. Finally, before the new year, I found a recipe for red velvet cupcakes that I had all the ingredients for and decided to give it a shot.
The recipe I used was adapted from Paula Dean’s recipe by Cakies. Unfortunately, my cupcakes did not turn out as pretty, but they definitely still tasted wonderful. 
The ingredients-
- 2 1/2 cups all-purpose flour
- 1 1/2 cups sugar
- 1 tsp baking soda
- 1 tsp salt
- 2 1/4 tsp cocoa powder
- 1 1/2 cup canola oil
- 1 cup buttermilk, room temperature
- 2 tbsp red food coloring (I only used 1 tbsp and they still turned out red)
- 1 tsp white distilled vinegar
- 2 tsp vanilla extract
For the cream cheese frosting-
- 1 pound cream cheese, softened
- 2 sticks butter, softened
- 2 tsps vanilla extract
- 4 cups sifted powdered sugar 
This was the first time I ever baked cupcakes from scratch, so I crossed my fingers that they would at least be edible.

They were great! I even brought them to my internship at the University of Maryland, Athletic Department when the men’s basketball team played Albany on New Year’s Eve. 
Not only did the team win, but a man proposed during the game. Luckily, she said “yes” unlike the woman at the UCLA vs. Richmond game. 
From now on, I will associate red velvet cupcakes with Terps basketball and love.
